Apple had just released iOS 5.1, here is the highlighted changes:
-Japanese language support for Siri
-Add Permanent Camera icon that allows the user to start camera while the device is locked
-Camera face detection now highlights all detected faces
-App Store download limit over 3G increased from 20 to 50 MB

Jailbreaker
However, always hold whenever a new version of iOS is released if you are a jailbreaker.
You will lose your jailbreak, cydia, and all your tweaks if you do the update.
You should wait until a new jailbreak is released.
Here are some features introduced in previous iOS release that you might not know:
Notification Center
-Hold the notification icon on lockscreen, and swipe to unlock and go to the specific notification.
-Drag on lockscreen to see list of notifications
Music
-Ability to delete songs from device (by swiping over the corresponding song).
-Tap and hold on a song to view extended song information.
Calendar
-Can now create, rename, and delete calendars right on the device.
-Tap and hold or double-tap to create a new event.
-Week view in landscape orientation.
-Drag appointments to a new time slot.
-Drag handles to change start and end times.
Photos
-Built-in basic photo editing: crop, red-eye, auto-enhance and rotate photos.
-Ability to create and edit local photo albums folders
Safari
-Private Browsing (interface colors change from blue to black. Change via settings).
-Search text on web pages from the search box
Settings
-Ability to rename your device.
-The Usage screen is improved and now shows how much of the memory is consumed by each app.
Keyboard
-Ability to create keyboard shortcuts (autotext) to replace custom phrases. By default includes “omw” which expands to “On my way!”.
PC-Free
-Ability to wirelessly sync to iTunes over Wi-Fi added (an initial tethered sync is needed to pair them together and the setting must be enabled in iTunes).
-OTA delta software updates: from iOS 5 forward, devices can now self-update the system software right on the device itself through Wi-Fi or 3G. No iTunes needed.
VoiceOver
-Option to speak text selection.
General
-Built-in system-wide dictionary (press and hold on a word gives the option to copy or define. Define brings up a view with definition of the selected word).
-Customized vibrate alert patterns (can be set per-contact).
-LED flash alerts
iPad Multi-Touch Gestures
-Pinch to the home screen.
-Swipe up to reveal the App Switcher (multitasking) tray.
-Swipe left or right to switch between apps.
